Prep and dry
If wings are whole, separate into drumettes and flats and discard wing tips or save for stock. Pat the pieces very dry with paper towels—this step is essential for crisp skin.

Coat with baking powder and season
In a large bowl, combine baking powder, kosher salt, and black pepper. Add the dried wing pieces and toss until evenly coated. The baking powder helps create a crisp exterior when cooked.

Cook the wings (oven method)
Preheat oven to 250°F (120°C). Place a wire rack on a rimmed baking sheet and arrange wings skin-side up with space between them. Bake at 250°F for 30 minutes to render fat. Increase oven temperature to 425°F (220°C) and roast until deep golden and crisp, 40–50 minutes more, flipping once halfway. Alternatively, for deep frying: heat oil in a deep pot to 375°F (190°C) and fry wings in batches for 8–10 minutes until golden and crisp; drain on a paper towel-lined tray.
Buffalo Sauce

Make the sauce
While wings cook, melt butter in a small saucepan over low heat. Add hot sauce, apple cider vinegar, Worcestershire sauce, honey, garlic powder, and smoked paprika. Whisk gently until fully combined and warmed through but not boiling. Season with kosher salt and black pepper. Taste and adjust heat or sweetness if desired. Keep warm until ready to toss with wings.

Toss wings in sauce
When wings are cooked and crisp, transfer them to a large clean bowl. Pour the warm buffalo sauce over the wings and toss gently but thoroughly so each piece is evenly coated. Serve immediately so the skin remains crisp-coated.

Make the dip
In a medium bowl, combine crumbled blue cheese, sour cream, mayonnaise, buttermilk, lemon juice, Worcestershire sauce, garlic powder, salt, and pepper. Stir gently, leaving some chunks of blue cheese for texture. Adjust consistency with additional buttermilk if you prefer a thinner dip. Chill for at least 15 minutes to let flavors meld (can be made up to a day ahead).

Serve
Spoon the blue cheese dip into a serving bowl and sprinkle a little extra crumbled blue cheese on top if desired.

Wash and cut carrots and celery into sticks. Chill until ready to serve so they are crisp and cold.
