Nacho Base

Prep

    Preheat and prep beans

    Preheat your oven to 375°F (190°C). If using canned black beans, drain and rinse them under cold water, then pat slightly dry.

    Make lemon crema

    In a small bowl, whisk together sour cream, lemon juice, lime zest (if using), 1/4 tsp salt, and 1/8 tsp black pepper until smooth. Taste and adjust acidity or salt. Transfer to refrigerator until needed.

    Make guacamole

    Halve and pit the avocados, scoop flesh into a bowl and mash to a chunky consistency. Stir in diced onion, lime juice, chopped cilantro, 1/2 tsp salt, 1/8 tsp pepper, and optional diced jalapeño. Adjust seasoning to taste and cover with plastic wrap pressed to the surface to prevent browning.

Assemble Nachos

    On a large rimmed baking sheet or oven-safe platter, spread half of the tortilla chips in an even single layer, leaving small gaps so toppings sit between chips rather than solely on top.

    Scatter half of the warm black beans evenly over the chips. If your beans are cold, heat them briefly in a microwave-safe bowl (30–60 seconds) or warm in a small saucepan with a pinch of salt and 1 tsp olive oil until just heated through.

    Sprinkle half of both shredded Monterey Jack and shredded cheddar evenly over the chips and beans. Add a portion of sliced black olives, a few jalapeño slices, and half of the diced tomatoes.

    Top with the remaining tortilla chips in a staggered second layer, then repeat: distribute the remaining black beans, cheeses, olives, jalapeños, and tomatoes so the stack is balanced.

Bake & Finish

    Place the assembled nachos in the preheated oven and bake 8–10 minutes, or until cheeses are melted and bubbly and edges of chips are lightly golden. For a crisper finish, broil on high for 45–60 seconds while watching closely to avoid burning.

    Remove nachos from oven. Dollop spoonfuls of chunky tomato salsa and guacamole across the top (or serve salsa and guacamole on the side for guests). Drizzle the prepared lemon crema in a thin zig-zag over the nachos or transfer to a small bowl for serving.

    Garnish with chopped green onions or cilantro and serve with lime wedges to squeeze over individual portions.
