Method
Grits
Bring 4 cups of water and 1 tsp salt to a gentle boil in a medium saucepan over medium-high heat.
Cajun Butter
In a small bowl combine 4 tbs softened butter, 1 tsp paprika, 1/4 tsp cayenne, 1/2 tsp onion powder, 1/2 tsp garlic powder, 1/4 tsp dried thyme, 1/2 tsp lemon zest and 1/4 tsp salt. Mix until smooth and homogeneous.
Set half of the butter mixture aside to melt over the finished shrimp; reserve the other half for serving or additional flavor as desired.
Shrimp & Vegetables
Pat 1 lb shrimp dry and season with 3/4 tsp salt and 1/2 tsp black pepper.
Heat 1 tbs olive oil and 1 tbs butter in a large skillet over medium-high heat until butter foams.
Add 1/2 cup diced onion and sauté 2–3 minutes until translucent.
Add 1 cup sliced mushrooms and cook 4–5 minutes until they release liquid and begin to brown.
Stir in 2 tsp minced garlic and cook 30 seconds until fragrant.
Push vegetables to the side of the pan, add shrimp in a single layer and cook 1.5–2 minutes per side (depending on size) until pink and opaque. Do not overcook.
Assembly & Serve
Scatter an additional 1/2 cup shredded cheddar across the bowls if you like extra cheese; allow the residual heat to melt it.
