Prepare glass (optional salted rim)

If you prefer a salted rim, run a lime wedge around the top edge of a highball or Collins glass. Dip the wet rim into a small plate of coarse salt, rotating to coat evenly. Set the glass aside.

Add ice

Fill the prepared glass with about 1 cup of fresh ice (enough to come near the top of the glass but leave room for liquids).

Measure tequila and lime

Pour 2 oz blanco tequila and 1/2 oz (about 1 tablespoon) fresh lime juice directly over the ice.

Top with sparkling mineral water

Slowly pour 4 oz chilled Topo Chico (or other unflavored sparkling mineral water) into the glass. Pour gently to preserve carbonation.

Stir gently

Use a bar spoon or long spoon to give the drink 2–3 gentle stirs to combine tequila and lime with the sparkling water without flattening it.

Garnish and serve

Float or place 1 lime wedge or wheel on the rim or in the drink as a garnish. Serve immediately while fizzy.
