Housemade Sour Mix

Make sour mix

Combine fresh lemon juice, fresh lime juice, and simple syrup in a jar or small pitcher. If using egg white for a frothy texture, add it now. Dry shake (no ice) vigorously for 10–15 seconds if using egg white. Then add ice and shake again 10 seconds to chill and dilute. Strain into a clean bottle or container. Chill until ready to use. Yields about 8 oz; use 1 oz per cocktail.

Prepare glass

Chill a coupe or rocks glass by filling it with ice and setting aside, or place in freezer for a few minutes.

Build and shake

Add Dulce Vida Blanco Tequila (2 oz), triple sec (0.75 oz), agave syrup (0.5 oz), housemade sour mix (1 oz), and fresh lime juice (0.5 oz) to a cocktail shaker. Add a generous scoop of ice (about 4–6 oz by volume). If you included egg white in the sour mix and want extra foam, you can add an additional egg white (optional) and perform a dry shake first for 10–12 seconds, then add ice and shake again 10–15 seconds until well chilled.

Strain and garnish

Discard ice from chilled glass. Double-strain the cocktail into the chilled glass using a Hawthorne strainer and fine mesh strainer to remove ice shards and any egg white solids. Garnish with a lime wheel or wedge on the rim. Optionally express a lime peel over the top for aroma.

Serve

Serve immediately. Recommend serving with a small napkin; the cocktail is balanced between bright citrus, agave sweetness, and the tequila's herbal notes.
