Method
Pico de Gallo
Combine the diced tomatoes, diced onion, chopped cilantro, minced jalapeño (if using), lime juice and 1/4 tsp salt in a bowl. Mix gently, taste and adjust seasoning. Let sit at room temperature while you prepare the quesadillas so flavors meld (10–15 minutes).
Quesadilla & Filling
Prepare Chicken
Place shredded cooked chicken in a medium bowl. Add 1/2 tsp salt, 1/4 tsp black pepper and 1/2 tsp ground cumin. Toss to evenly season. If the chicken is cold, warm it briefly in a skillet over medium heat (1–2 minutes) just to take the chill off.
Assemble Quesadillas
Lay out 4 tortillas on a clean work surface. On two of the tortillas evenly distribute half the cheddar and half the monterey jack over the surface, leaving a 1/2-inch border. Divide the seasoned shredded chicken over the cheese, then sprinkle the crushed tortilla chips over the chicken for a nacho-style crunch. Spoon about 2 tablespoons of salsa roja over the chicken (avoid making it soggy). Top with remaining cheeses, then place the other two tortillas on top to form two stacked quesadillas (or fold each tortilla in half if you prefer making 4 folded quesadillas).
Cook Quesadillas
Heat a large nonstick or cast-iron skillet over medium heat. Add 1 tablespoon oil or butter and swirl to coat. Carefully transfer one assembled quesadilla to the skillet. Cook 2–3 minutes until the bottom is golden brown and cheese begins to melt. Add remaining 1 tablespoon oil or butter around the edge of the tortilla if needed. Flip carefully (use a spatula to support) and cook another 2–3 minutes until the second side is golden and the cheese is fully melted. Reduce heat slightly if the tortilla browns too fast before cheese melts. Repeat with the second quesadilla. Total cook time per quesadilla ~4–6 minutes.
Transfer cooked quesadillas to a cutting board and let rest 1 minute, then slice each into 6 wedges with a sharp knife or pizza cutter. This resting shortens cheese leakage and helps cleaner slices.
Salsa Roja & Toppings
Plate quesadilla wedges and top or serve alongside with pico de gallo, additional salsa roja and a dollop of sour cream. Garnish with pickled jalapeños and cilantro leaves, and serve lime wedges alongside for squeezing over. Offer extra crushed tortilla chips at the table for added crunch if desired.
