Prepare shaker

Add gin, fresh lemon juice, honey syrup and optional apertif/elderflower liqueur to a cocktail shaker.

Add ice and shake

Fill the shaker with ice (about 4–6 medium cubes) and shake vigorously for 10–12 seconds until the outside of the shaker is cold.

Strain into glass

Place large ice cubes into a rocks or highball glass. Fine-strain the shaken mixture over the ice to remove small ice shards and any pulp.

Top with cider

Slowly pour the chilled local dry cider over the strained cocktail (about 6 oz). If you prefer a lighter drink, top with 0.5 oz cold sparkling water instead of a full pour of cider or add the sparkling water after the cider to adjust effervescence.

Bitters (optional)

If using, add 2 dashes of Angostura bitters on top of the cider for aromatic depth and a touch of color.

Garnish & Finish

Express a lemon wheel over the drink to release oils, then drop the wheel or a thin apple slice into the glass.

Garnish with a sprig of fresh thyme or rosemary. Gently slap the herb between your hands before placing it on the drink to awaken its aroma.

Serve immediately with a stirring straw or short spoon so the drinker can gently mix before drinking to incorporate the cider without losing all effervescence.
