Cook bacon

Place a large skillet over medium heat. Add chopped bacon and cook until crisp, 6–8 minutes, stirring occasionally. Use a slotted spoon to transfer bacon to a paper towel-lined plate. Reserve 1 tablespoon bacon fat in the skillet; discard excess or save for another use.

Brown sausage

Add the breakfast sausage to the same skillet over medium-high heat. Break it up with a spoon and cook until no pink remains and edges are golden, about 6–8 minutes. Drain any excess fat if needed, then transfer sausage to a bowl and set aside.

Crisp shredded potatoes

Wipe the skillet if heavily soiled, then add 1 tablespoon unsalted butter and spread to coat over medium heat. Add the shredded potatoes in an even layer, season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Press down gently with a spatula and cook, undisturbed, until bottom is golden and crisp, about 6 minutes. Flip in sections or stir and cook until potatoes are cooked through and most pieces are crisp, another 4–5 minutes. Transfer to a bowl and keep warm.

Scramble eggs

In a bowl, whisk the 6 large eggs with the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper. Heat the reserved skillet over medium-low, add 1 tablespoon butter. Pour in eggs and cook, stirring gently, until soft-curd scrambled and just set, about 3–4 minutes. Remove from heat.

Combine filling components

In a large bowl, combine cooked sausage, chopped crisp bacon, scrambled eggs, and crisp shredded potatoes. Stir in chopped cilantro and 1 cup of the shredded cheese blend (reserve remaining cheese for assembly). Taste and adjust seasoning.

Tortillas & Assembly

Warm tortillas

Warm the flour tortillas so they are pliable: wrap in a clean kitchen towel and microwave for 20–30 seconds or heat individually in a dry skillet over medium for 15–20 seconds per side. Keep wrapped to stay warm.

Assemble quesadilla stacks

Heat a large nonstick skillet over medium-low and brush with a little vegetable oil or spray. Place one tortilla in the skillet. Sprinkle a thin, even layer (about 2 tablespoons) of cheese over the tortilla, leaving a 1/2-inch border. Top with about 3/4 cup of the filling mixture and a spoonful (2 tablespoons) of pico de gallo. Add another light sprinkle of cheese (about 2 tablespoons) and place a second tortilla on top. Press lightly with a spatula. Cook until the bottom is golden and cheese starts to melt, 2–3 minutes. Carefully flip the entire quesadilla stack (use two spatulas) and cook the second side until golden and cheese is fully melted, 2–3 minutes. Transfer to a cutting board and let rest 1 minute. Repeat to make additional stacks; yield about 3 stacks using 6 tortillas (2 tortillas per stack).

Slice and finish

Using a sharp knife or pizza cutter, cut each stack into 4 wedges. If desired, return wedges to the skillet for 30–60 seconds per side to re-crisp before serving.

To Serve

Plate quesadilla wedges with the leftover pico de gallo, salsa, and sour cream on the side for dipping. Serve immediately while hot. Leftovers can be wrapped and refrigerated for up to 2 days; reheat in a skillet or oven to preserve crispness.
