Build and stir
Place a mixing glass or small pitcher on a bar towel. Add 2 oz bourbon, 0.5 oz amaro, 0.25 oz simple syrup, 0.25 oz cherry or maraschino liqueur (if using), and 2 dashes Angostura bitters.
Prepare the glass
Place a single large ice cube in an old fashioned (rocks) glass.
Strain
Using a julep or hawthorne strainer, strain the stirred cocktail over the large ice cube in the old fashioned glass.
Garnish and finish
Express the oils from an orange peel over the drink by holding the peel skin-side down 2–3 inches above the glass and giving it a firm squeeze so the oils spray across the surface. Run the peel around the rim, then drop it into the drink. Add one brandied or Luxardo cherry on a pick and place it in the glass.
Serve
Serve immediately. Sip slowly to enjoy the balance of bourbon, herbal-sweet amaro, and cherry-backed bitters.
