Battered Fried Cauliflower
Prepare cauliflower
Trim a 1 lb head of cauliflower into bite-sized florets, keeping sizes fairly uniform (about 1-1.5 inches). Rinse and pat dry thoroughly with a kitchen towel or paper towels — dry florets help the batter adhere and prevent oil splatter.
Make seasoned dredge
In a medium bowl combine 1/2 cup all-purpose flour, 1/2 tsp salt, and 1/4 tsp black pepper. Toss the dried cauliflower florets in this seasoned flour so each piece gets a light coating. Shake off excess and set florets on a rack while you prepare the batter.
Mix batter
In a separate bowl whisk together 3 tablespoons all-purpose flour, 2 tablespoons cornstarch, 1/2 teaspoon baking powder, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp smoked paprika, 1 tsp salt and 1/2 tsp black pepper. If using the optional egg, beat it lightly and add to the dry mix. Gradually whisk in 3/4 cup cold sparkling water (or cold water) until you have a smooth, slightly thick but pourable batter — it should coat the back of a spoon. If batter seems too thick, add up to 2 tablespoons more water. Keep the batter cold for a crisp coating.
Heat oil
Pour about 1 to 1.5 cups neutral oil into a heavy-bottomed skillet or Dutch oven so oil depth is about 1 to 1.5 inches. Heat over medium-high until oil reaches 350°F (175°C) — if you don't have a thermometer, test by dropping a teaspoon of batter into the oil; it should sizzle and rise steadily without browning immediately.
Batter and fry
Working in small batches (4–6 florets depending on pot size), dip each dredged floret into the batter, letting excess drip back into the bowl, then carefully lower into hot oil. Fry without overcrowding so oil temperature stays near 350°F. Cook 3–4 minutes per batch, turning once with tongs, until batter is evenly golden brown and crisp.
Drain
Use a slotted spoon or spider to remove fried cauliflower to a wire rack set over a baking tray or to a plate lined with paper towels to drain briefly. Immediately season with a light sprinkle of extra salt to taste while still hot.
Frying & Finishing
Repeat frying in batches until all florets are cooked. Maintain oil temperature between batches — let oil return to 350°F before adding the next batch. If oil begins to darken or smoke, lower heat and remove from heat briefly to cool.
Once all batches are fried and drained, transfer cauliflower to a serving dish. Sprinkle chopped fresh parsley over the top for color and brightness and arrange lemon wedges alongside. Serve immediately while hot and crisp.
Optional Dipping Sauce
Make sauce
Whisk together 1/4 cup mayonnaise, 2 tablespoons plain yogurt or sour cream, 1 teaspoon hot sauce, 1 teaspoon lemon juice, 1/2 teaspoon minced garlic and 1/8 teaspoon salt in a small bowl until smooth. Taste and adjust heat or acidity as desired.
Serve sauce chilled or at room temperature alongside the hot fried cauliflower.
