Prepare protein (choose one)
Chicken
Slice chicken breasts into 1/2-inch strips. In a bowl, combine 1/2 tbs olive oil, 1/2 tbs lime juice, 1/2 tsp garlic powder, 1/2 tsp cumin, 1/2 tsp paprika, 1/2 tsp salt and a pinch of black pepper. Toss chicken in mixture and let sit 10 minutes. Heat 1 tbs neutral oil in a skillet over medium-high heat. Cook chicken strips 4–6 minutes, turning once, until cooked through and internal temperature reaches 165°F (74°C). Remove from heat and rest 2 minutes, then lightly shred or chop into kid-friendly pieces.
Pork
Trim pork and slice into 1/2-inch strips. In a bowl, combine 1/2 tbs olive oil, 1/2 tbs lime juice, 1/2 tsp garlic powder, 1/2 tsp cumin, 1/2 tsp paprika, 1/2 tsp salt and pinch of black pepper. Toss pork in mixture and let sit 10 minutes. Heat 1 tbs oil in a skillet over medium-high heat. Cook pork strips 6–8 minutes, stirring occasionally, until no pink remains and pieces are browned. Check for doneness; internal temperature should be 145°F (63°C) plus a short rest. Remove and rest 2 minutes, then chop to small pieces for kids.
Fried Tofu
Press tofu to remove excess moisture, then cut into 1/2-inch cubes. Set up three bowls: flour mixed with a pinch of salt, beaten egg, and breadcrumbs mixed with 2 tsp cornstarch. Toss tofu cubes lightly in flour, dip in egg, then coat in breadcrumbs. Heat 1/2 cup vegetable oil in a skillet over medium heat (oil should be about 350°F / sizzle test). Fry tofu in batches 2–3 minutes per side until golden and crispy. Transfer to paper towels to drain and lightly season with 1/4 tsp salt. Alternatively, for a lighter option, spray breaded tofu and bake at 425°F (220°C) 15–18 minutes, flipping halfway, until crisp.
Prepare tortillas & toppings
Warm tortillas: stack tortillas and wrap in a clean kitchen towel. Microwave 30–45 seconds, or warm individually in a dry skillet 15–20 seconds per side over medium heat until pliable. Keep wrapped to stay warm.
Prepare toppings: place shredded cheese, lettuce, diced tomatoes, Greek yogurt/sour cream, and mild salsa in small bowls for easy assembly. Cut lime into wedges.
Assemble tacos
Lay a warm tortilla on a plate. Spoon 2–3 tablespoons of the chosen protein (chicken, pork, or 2–3 pieces of fried tofu) into the center of each tortilla. Top with a sprinkle (about 2 tablespoons) of shredded cheddar, a small handful (about 2 tablespoons) shredded lettuce, and 1–2 tablespoons diced tomatoes.
Add 1 tablespoon plain Greek yogurt or sour cream and a small spoon (1 teaspoon) mild salsa if using. Serve with a lime wedge and optional cilantro. For picky kids, offer components separately so they can build their own.
Serving & storage
Serve warm. Leftover cooked chicken, pork, or tofu will keep in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over low heat or microwave until warmed through. Keep tortillas separately wrapped to avoid sogginess.
