Prepare rice

If you don't have cooked rice ready, cook short-grain white rice according to package directions (typically 1 cup rice to 1–1.25 cups water). For this recipe you need 2 cups cooked rice. Let it rest covered while you prepare other components.

Soak/ Cook rice noodles

Place 1 cup dried rice vermicelli in a heatproof bowl. Pour 4 cups boiling water over the noodles or immerse in boiling water and let sit 3–5 minutes until just tender. Stir gently, then drain in a colander and rinse briefly with cold water to stop cooking. Toss with a drop of sesame oil or neutral oil (about 1/4 tsp) to prevent sticking.

Prepare protein

If using chicken: cut 8 oz chicken into small, even 1/2-inch dice. Heat 1 tsp neutral oil in a nonstick skillet over medium heat. Add the chicken and a pinch of salt and pepper; cook 4–6 minutes, stirring, until cooked through and no longer pink. If using tofu: press briefly, cut into small cubes and pan-fry in the oil until golden on all sides, about 4–6 minutes.

Prepare vegetables

While the protein cooks, julienne 1/2 cup carrot and thinly slice 1/2 cup cucumber. Warm the corn (1/4 cup) gently in the microwave for 20–30 seconds or briefly in the skillet with the cooked protein just to heat through. Reserve sliced green onions for garnish.

Make the sweet soy sauce

In a small bowl combine 3 tbsp sweet soy sauce (kecap manis) with 1 tsp low-sodium soy sauce, 1 tsp honey or brown sugar, 1/2 tsp sesame oil, 1/2 tsp minced garlic (optional), 1/2 tsp lime juice (optional), 1/4 tsp neutral oil and a pinch (1/8 tsp) black pepper. Stir until sugar dissolves and taste — adjust sweetness or saltiness for a kid-friendly mild flavor.

Toss noodles and protein with sauce

Place the drained rice noodles in a mixing bowl. Add the cooked chicken or tofu and pour about half of the sweet soy sauce (reserve the rest to drizzle). Toss gently so noodles and protein are evenly coated. If using warm protein, this will slightly warm the noodles.

Build the rice bowl

Divide 2 cups cooked rice between two shallow bowls (about 1 cup cooked rice per serving). Top each bowl with half of the sauced rice noodles and protein mixture. Arrange carrot, cucumber, and corn in small separate piles on top so the bowl is colorful and kid-friendly.

Finish and serve

Drizzle remaining sweet soy sauce lightly over each bowl (about 1/2–1 tbsp per bowl) to taste. Garnish with sliced green onions, a sprinkle of toasted sesame seeds and a small pinch of nori strips or furikake if using. Serve warm or at room temperature.
