Hibiscus-Mint Syrup
Make the syrup
Combine 1 cup water and 1 cup granulated sugar in a small saucepan over medium heat. Stir until the sugar dissolves and the mixture comes to a gentle simmer.
Add 1 cup dried hibiscus and 1/2 cup packed fresh mint leaves to the simmering syrup. Reduce heat to low and simmer gently for 6–8 minutes, stirring occasionally, until the liquid is deeply colored and fragrant.
Remove the pan from heat and let the hibiscus and mint steep in the syrup for 15 minutes to extract more flavor and aroma.
Strain the syrup through a fine-mesh sieve into a heatproof container, pressing on the solids to extract as much liquid as possible. Discard solids. Let syrup cool to room temperature, then refrigerate until cold. Makes about 1 cup of syrup.
Hemp & Root Blend
If your Pathfinder Hemp & Root is a concentrated cordial or thick syrup, dilute 3 tablespoons with 30 ml cold water and stir to integrate. If using a ready-to-pour aperitif, use 3 tablespoons neat. Chill briefly if needed.
Cocktail Assembly
Fill a highball glass or Collins glass with 1 cup crushed ice.
Add 3 tablespoons (about 1.5 oz) prepared Hemp & Root blend to the glass.
Pour in 1.5 oz hibiscus-mint syrup and 0.75 oz fresh lime juice.
Gently stir the mixture to combine flavors and evenly chill the drink.
Top with 3 oz club soda or sparkling water; give one gentle stir to lift the carbonation through the drink.
Garnish with 1–2 mint sprigs and a lime wheel or wedge. Clap the mint between your palms once before garnishing to release aroma.
Serve immediately with a straw if desired.
