Method
Crispy Cauliflower or Tofu
Prepare
If using tofu: press 14–16 oz extra-firm tofu 30–60 minutes, then cut into 1-inch cubes. If using cauliflower: cut 2 lb into medium florets, rinse and pat dry thoroughly.
Make batter
In a large bowl whisk together 1 cup all-purpose flour, 1 tbs cornstarch, 1 tsp baking powder, 2 tsp salt, 1 tsp black pepper and 1 tsp garlic powder. Slowly whisk in 1 cup cold sparkling water until just combined — batter should be slightly thick but airy. Chill 5–10 minutes.
Heat oil
Pour neutral oil into a large Dutch oven or deep skillet to a depth of 1½–2 inches (about 1 cup). Heat over medium-high until thermometer reads 350°F (175°C). If you don't have a thermometer, oil should sizzle gently when a drop of batter is added and turn golden in ~45 seconds.
Coat and fry
Working in batches (do not overcrowd), dip tofu cubes or cauliflower florets into the batter, letting excess drip off, and carefully add to hot oil. Fry until golden brown and crisp, 3–5 minutes per batch for cauliflower and 2–4 minutes for tofu, turning as needed. Remove with a slotted spoon to a wire rack or paper towel-lined tray to drain. Keep warm in a single layer in a low oven (200°F/95°C) while finishing remaining batches.
Sweet-Spicy Glaze
In a medium saucepan combine 1 cup honey (or maple syrup), 1 tbs soy sauce, 2 tbs rice vinegar, 2 tbs sambal oelek, 2 tsp grated ginger and 2 cloves minced garlic. Bring to a low simmer over medium heat, stirring so it doesn't stick, about 2–3 minutes.
Mix 1 tsp cornstarch with 1 tbs water to make a slurry. Slowly whisk the slurry into the simmering sauce. Continue to simmer 1–2 minutes until sauce thickens to a glossy, coat-able consistency. Remove from heat and stir in 1 tsp sesame oil. Taste and adjust: add more soy for salt, vinegar for brightness, or sambal/hot pepper for heat.
For a sticky, restaurant-style finish, put the fried cauliflower/tofu into a large mixing bowl, pour the hot glaze over it, and gently toss until evenly coated. Work quickly so pieces stay crisp.
Finish & Garnishes
Transfer glazed cauliflower/tofu to a family-style serving tray or shallow platter in a single layer (or slightly overlapping) so pieces remain crisp rather than steaming in a deep pile.
Scatter thinly sliced scallions (4 stalks) and 2 tbs toasted sesame seeds over the top. Add cilantro leaves and thinly sliced red chili if using. Serve with lime wedges on the side for brightness.

Prepare 6 cups steamed jasmine rice according to package directions (about 2 cups dry rice yields ~6 cups cooked). Keep covered and warm for pick-up.
Quick pickled cucumber: toss 3 cups thinly sliced cucumber with 1/2 cup rice vinegar, 2 tbs sugar, 1 tsp salt and 1 tsp sesame oil; let sit 15–30 minutes before packing alongside the main dish.
