Marinate the Pork Belly

Start by scoring the skin of the pork belly in a crisscross pattern. This helps with the crispiness. In a bowl, mix together the olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the pork belly, making sure to get it into the cuts. Squeeze the juice of the lemon over the meat and drizzle with honey. Let it marinate for at least 2 hours, preferably overnight in the refrigerator.

Roast the Pork Belly

Preheat your oven to 220°C (428°F). Place the marinated pork belly on a roasting tray, skin side up. Roast for 30 minutes to start, then reduce the temperature to 160°C (320°F) and continue roasting for an additional 1.5 hours. Keep an eye on it to ensure the skin gets crispy and doesn’t burn. If necessary, cover with foil to prevent over-browning.

Prepare Optional Sides

While the pork is roasting, prepare your sides. For the roasted potatoes, cut them into wedges, toss with olive oil, salt, and rosemary, and roast them in the oven for the last 45 minutes of the pork's cooking time. For the steamed vegetables, simply steam them until tender, around 5-7 minutes.
