Directions
Prepare the rice
Rinse the rice under cold water until the water runs clear. In a medium pot, bring the vegetable broth (or water) to a boil. Add the rinsed rice and a pinch of salt. Reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and the liquid is absorbed. Remove from heat and let it sit for 5 minutes, then fluff with a fork.
Cook the vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced bell pepper and zucchini. Sauté for about 5-7 minutes until they are tender. Season with salt and pepper. Remove the vegetables from the skillet and set aside.
Cook the shrimp
In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for about 30 seconds until fragrant. Add the shrimp and Cajun seasoning. Cook for about 3-4 minutes, stirring occasionally, until the shrimp are pink and cooked through.
Assemble the bowl
In serving bowls, layer the seasoned rice, followed by the sautéed vegetables, and top with the Cajun garlic shrimp. Garnish with sliced green onions.
