Maple Buffalo sauce

Make sauce
In a small saucepan or small skillet over low heat, combine 3 tbs hot sauce, 1.5 tbs maple syrup, 1 tsp butter, 1/2 tsp apple cider vinegar, a pinch of black pepper and 1/4 tsp salt. Warm gently while whisking until the butter melts and the sauce is homogenous, about 1–2 minutes. Taste and adjust heat or sweetness (add up to 1/2 tbs more maple or 1/2 tbs more hot sauce as desired). Keep warm on the lowest heat setting or transfer to a small bowl.

Pan-fry bacon
In a cold skillet large enough for the bacon, lay 4 bacon slices in a single layer. Turn heat to medium and cook, flipping occasionally, until browned and crisped to your liking, about 8–12 minutes depending on thickness. Transfer cooked bacon to a paper-towel-lined plate to drain. Reserve 1 teaspoon of the bacon fat in the skillet for frying eggs (or wipe skillet and add 1 tsp neutral oil if you prefer).

Toast everything buns
Split the 2 everything buns. Spread about 1 tbs total butter across cut sides (or 1/2 tbs per bun half). Heat a clean skillet over medium heat. Place cut sides down and toast until golden and crisp, 1–2 minutes. Remove from heat. Place 1 slice of cheddar on each bottom bun half; cover loosely with a pan lid for 30–45 seconds to help cheese begin to melt while you fry the eggs.

Fry eggs sunny-side or over-easy
In the skillet reserved with 1 tsp bacon fat (or 1 tsp oil + 1/2 tbs butter if no bacon fat), heat over medium-low. Crack 2 large eggs into the pan, spacing them apart. Season each with a small pinch of salt and pepper. For sunny-side: cover with a lid and cook until whites are set and yolks still runny, about 2–3 minutes. For over-easy: cook until whites set, carefully flip each egg and cook 10–20 seconds more for a runny yolk. Remove eggs with a spatula and place each on top of the cheddar on the bottom bun halves.

Serve
Serve immediately while hot so cheese is melty and sauce is warm. If storing, keep components separately and assemble just before eating.
