Cook compote

Combine the blueberries, sugar, lemon juice, and water in a small saucepan over medium heat. Stir to combine and bring to a gentle simmer.

Let the mixture simmer, stirring occasionally, until the berries begin to break down and the sauce thickens, about 6–8 minutes. If using frozen berries, it may take a minute longer.

If you prefer a thicker compote, mix the cornstarch with 1 teaspoon cold water to make a slurry and stir it into the simmering compote. Cook for another 1 minute until thickened. Remove from heat and let cool slightly.

Sandwich Assembly & Cooking

Butter one side of each bread slice evenly with the softened butter. Place the bread butter-side down on a clean work surface.

Slice or tear the brie into even pieces and arrange over one bread slice (the unbuttered side). Aim for an even layer so the cheese melts uniformly—about 3 oz should cover two slices nicely.

Spoon the warm (not piping hot) blueberry compote over the brie in a thin layer. Be careful not to overload so the sandwich doesn't become soggy.

Top with the second slice of bread, butter-side up, to form the sandwich.

Heat a nonstick or cast-iron skillet over medium-low to medium heat. Place the sandwich in the skillet and cook for 3–4 minutes until the bottom is golden brown and the brie begins to soften.

Carefully flip the sandwich and cook another 3–4 minutes until the second side is golden and the brie is melted. Press gently with a spatula for even contact, but do not press so hard that the filling spills out.

Transfer the sandwich to a cutting board and let it rest 1 minute. Slice in half on the diagonal.

Drizzle the hot honey over the cut sandwich halves. If your hot honey is very thick, warm it briefly (10–15 seconds) in a microwave-safe container or by placing the jar in warm water so it pours easily.

Sprinkle the fresh thyme leaves on top if using, then serve immediately.
