In a large bowl, combine all the meats and marinate them with your choice of spices for at least 2 hours or overnight in the refrigerator.

Place the marinated meats on the grill. Grill the bison steak for about 5-7 minutes per side, ostrich fillet for 4-6 minutes per side, kangaroo steak for 3-5 minutes per side, alligator tail for about 4-5 minutes per side, python meat (if using chicken, cook for 6-8 minutes) for 4-6 minutes, and the wild boar sausage for about 6-8 minutes, turning occasionally until cooked through.

Grill the Meats

Remove the meats from the grill, let them rest for a few minutes, then slice and serve on a platter with your favorite dipping sauces and sides.
