Burger Patties

    Form patties

    Divide the 1 lb ground wagyu into two equal portions (about 8 oz each). Gently shape each portion into a loose patty about 3/4" to 1" thick and slightly wider than the bun. Do not overwork the meat — handle minimally to keep patties tender and juicy.

    Season

    Lightly brush or rub both sides of each patty with 1 tsp neutral oil. Sprinkle each side with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper (adjust to taste). Pat seasoning lightly so it adheres.

    Cook patties

    Preheat a cast-iron skillet or grill over medium-high heat until very hot. If using a skillet, add a small drizzle of oil and let it shimmer. Place patties on the hot surface and cook without pressing for 3-4 minutes to form a crust. Flip once and add 1/2 tbs Worcestershire sauce to the top of the patty. Cook another 3-4 minutes for medium (internal temp ~135°F/57°C). For thinner or thicker patties, adjust time accordingly. In the last 1-2 minutes of cooking, place 2 slices of mozzarella on each patty, cover the pan briefly (or close grill lid) to melt the cheese. Remove patties to rest for 2-3 minutes.

Bacon & Banana

    Cook bacon

    While patties rest, cook 4 bacon strips in a skillet over medium heat until crisp, 6-8 minutes, turning occasionally. Transfer to a paper towel–lined plate to drain. If preferred, bake bacon on a foil-lined sheet at 400°F (200°C) for 12-15 minutes until crisp.

    Prepare banana

    Peel the ripe banana and slice lengthwise into two halves. In the same skillet used for bacon, reduce heat to medium-low and add 2 tsp butter. Optionally sprinkle 1 tsp brown sugar over the banana halves. Place banana cut-side down in the butter and cook 1-2 minutes until caramelized and warmed through, then flip to warm the other side 30-45 seconds. Remove from heat. Season lightly with a pinch of salt if desired.

Buns & Assembly

    Toast buns

    Split the 2 brioche buns. Heat a clean skillet or griddle over medium heat and melt remaining 1 tsp butter. Place buns cut-side down and toast 30-60 seconds until golden and lightly crisp. Remove from heat.

    Prepare condiments

    In a small bowl, combine 2 tbs mayonnaise and 1 tsp Dijon mustard. Spread a thin layer on both the top and bottom bun halves. Place a lettuce leaf on the bottom bun if using.

    Assemble burger

    Place the mozzarella-topped wagyu patty on the bottom bun. Lay two bacon strips over the melted cheese. Position the caramelized banana half on top of the bacon. Top with the other patty (if making a double) or simply place the top bun over the toppings. Finish with a light crack of black pepper. Serve immediately while hot.
