Prepare Simple Syrup (if needed)

Make simple syrup
Combine equal parts granulated sugar and water in a small saucepan (or microwave-safe container). For this recipe, simmer 1/4 cup sugar with 1/4 cup water over medium heat, stirring until sugar dissolves. Remove from heat and let cool to room temperature. Refrigerate any extra; yields ~1/2 cup.
Assemble Soda

If using fruit or mint, add the fresh fruit slices or berries and mint leaves to the bottom of a tall glass. Lightly muddle with a wooden muddler or the back of a spoon to release juices and aroma. Do not over-muddle mint (gentle presses) to avoid bitterness.

Add sweetener and citrus
Add 2 tablespoons of cooled simple syrup (or flavored syrup) and 1 teaspoon fresh lemon or lime juice to the glass. If using bitters, add 2 dashes now.

Add ice and soda
Fill the glass with about 1 cup of ice cubes. Slowly pour 2 cups of cold carbonated water into the glass to preserve bubbles and mix gently with a long spoon or by lifting and turning the drink once—do not stir vigorously.

Adjust sweetness and flavor
Taste and adjust: add up to 1 tablespoon more syrup if you want it sweeter, or another 1/2 teaspoon citrus if you want brighter acidity. If using muddled fruit, press a bit more to release extra flavor and mix gently.
Garnish & Serve

Garnish the soda with a citrus wheel or wedge on the rim and a mint sprig. Serve immediately with a straw or stirring spoon.
