Method
Prepare Tajín Syrup & Rim
- 1
Make tajín syrup
Combine the Tajín seasoning (1 tsp) with 0.5 oz hot water in a small bowl and stir until dissolved. Stir in 0.5 oz simple syrup (or extra agave) until fully combined. Set aside to cool slightly.
- 2
Rim the glass: pour a thin layer of the tajín syrup on a small plate. Wet the serving glass rim with a lime wedge, then dip the rim into the tajín syrup mixture and twist to coat. If desired, finish with a light sprinkle of additional dry Tajín or coarse salt on top of the syrup rim to build texture.
Infuse & Sweeten
- 3
Shake & Strain
- 4
Add spirits and citrus: Into the shaker with muddled jalapeño and agave, add 2 oz Casamigos Blanco, 1 oz Patrón Citrónge, and 1 oz fresh lime juice. Fill the shaker with ice (about 1 cup).
- 5
Shake: Seal the shaker and shake vigorously for 12–15 seconds until well chilled and slightly frosted on the outside.
- 6
Double-strain: Place a fine mesh strainer over the prepared (tajín-rimmed) serving glass. Strain the cocktail into the glass to remove jalapeño solids and ice chips. If you prefer served on the rocks, fill the glass with fresh ice before straining.
Garnish & Serve
- 7
Garnish: Float a thin jalapeño slice on top and add a lime wheel on the rim. Optionally sprinkle a small pinch of dry Tajín over the top for aroma.
