Base Cocktails

    Shake the surfside mix

    Fill a cocktail shaker with 3/4 full of ice (about 6-8 ice cubes). Add light rum, coconut rum, pineapple juice, orange juice, fresh lime juice, orgeat, and simple syrup. Seal the shaker and shake vigorously for 12–15 seconds until the shaker is frosty and well-chilled.

    Prepare the glass

    Fill a tall tiki glass or Collins glass with crushed ice (about 1 cup). If you prefer a layered look, pack the crushed ice so it forms a mound above the rim.

    Strain

    Double-strain the shaken cocktail over the prepared crushed-ice-filled glass using a Hawthorne or fine strainer so the liquid pours evenly over the ice mound.

    Float dark rum

    Using the back of a bar spoon, gently pour the dark rum over the top of the drink so it floats and creates a darker layer on the surface (about 1/2 oz).

    Add bitters

    Dash 2 drops (2 dashes) of Angostura bitters over the top of the floated dark rum to add aromatics and a slight spice note.

Garnish & Serve

    Garnish with a fresh mint sprig tucked into the top of the crushed ice, a pineapple wedge on the rim, and a lime wheel. Optionally slap the mint between your palms and rub the rim of the glass with the mint to release aroma before inserting.

    Serve with a short reusable straw and a small cocktail pick to secure the pineapple wedge. Present immediately so the layers and crushed-ice texture are at their best.
