Marinated Grilled Chicken

Prepare and marinate chicken
Pound each chicken breast to an even thickness of about 1/2 inch (use a meat mallet or rolling pin inside a plastic bag). In a bowl combine 2 tbs olive oil, 1 tbs lemon juice, 2 tsp minced garlic, 1 tsp smoked paprika, 1 tsp dried oregano, 1 tsp salt, and 1/2 tsp black pepper. Add the chicken, turning to coat fully. Cover and refrigerate for at least 30 minutes, up to 4 hours.

Grill the chicken
Preheat a grill or grill pan to medium-high heat (about 375–425°F / 190–220°C). Remove chicken from marinade and let excess drip off. Grill 4–5 minutes per side, or until internal temperature reaches 165°F (74°C) and chicken has good grill marks. Transfer to a plate and let rest 5 minutes before slicing thinly to fit buns.

Prepare buns and produce
While chicken rests, slice tomato into 1/4-inch rounds (about 3–4 slices). Lightly butter the cut sides of the buns with 1 tbs softened butter. Heat a skillet over medium heat and toast buttered sides until golden, 1–2 minutes. Spread 1 tsp mayonnaise on each bottom bun.

Assemble sandwich
Place lettuce leaf on the mayo-coated bottom bun. Lay sliced grilled chicken on top of lettuce. Immediately top chicken with 1 slice american cheese so residual heat softens the cheese. Add tomato slices on top of cheese. Cap with the top bun and press gently. Repeat to make the second sandwich.

Fry the potatoes
Heat vegetable oil in a deep pot to 325°F (160°C). Fry potatoes in batches for 3–4 minutes until soft but not browning. Remove and drain on paper towels. Increase oil temperature to 375°F (190°C) and fry a second time in batches for 2–3 minutes until golden and crisp. Drain on paper towels and immediately season with 1 tsp salt and 1/4 tsp black pepper while hot.

Finish and serve
Plate the sandwich with a generous portion of fries on the side. Serve hot. Optionally provide ketchup or your preferred dipping sauce.
