Seafood Scampi Bucatini Ingredients

Method

Cooking Directions

1

Prepare the Bucatini

Bring a large pot of salted water to a boil. Add the bucatini pasta and cook according to package instructions until al dente. Drain and set aside, reserving some pasta water.

2

Sauté the Seafood

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp and sea scallops, cooking for about 3-4 minutes until the shrimp turn pink and the scallops are opaque. Season with salt and pepper.

3

Add Vegetables

Add the halved grape tomatoes, asparagus pieces, and sliced baby squash to the skillet. Sauté for an additional 3-4 minutes until the vegetables are tender.

4

Make Lemon Butter Sauce

Lower the heat, then add the butter and lemon juice to the skillet, stirring to combine. If the sauce is too thick, add a splash of the reserved pasta water to reach the desired consistency.

5

Combine with Pasta

Add the cooked bucatini to the skillet, tossing gently to coat the pasta in the sauce. Stir in the chopped parsley and basil. Adjust seasoning with salt and pepper to taste.

6

Serve

Serve the seafood scampi bucatini immediately, garnished with additional fresh herbs if desired.
