Caramelize the Onions

In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring frequently, for about 30-40 minutes until they are deep golden brown and caramelized.

Add Garlic and Sherry

Add the minced garlic and cook for an additional 2 minutes. Pour in the sherry wine and scrape the bottom of the pot to deglaze. Let it simmer for 5 minutes to reduce slightly.

Add Broth and Herbs

Stir in the beef broth, thyme, bay leaf, salt, and pepper. Bring the mixture to a simmer and let it cook for another 20 minutes to meld the flavors.

Prepare Croutons

While the soup is simmering, preheat your oven to 375°F (190°C). Slice the baguette into 1-inch thick slices, brush with olive oil, and place on a baking sheet. Toast in the oven for about 10-15 minutes until golden and crispy.

Assemble and Serve

Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, top generously with the Gruyere cheese, and place under a broiler until the cheese is bubbly and golden brown. Serve hot with the garlic croutons on the side.
