Prepare the Oven and Ramekins

Preheat your oven to 200°C (400°F) and grease four ramekins with butter. Dust each ramekin with cocoa powder to prevent sticking.

Melt Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

Mix the Batter

In a separate bowl, whisk together the granulated sugar, eggs, and egg yolk until well combined. Add the melted chocolate mixture and mix well. Fold in the flour and salt until just combined.

Add Ganache Center

Pour half of the batter into each ramekin. Add a tablespoon of salted caramel sauce in the center of each, then top with the remaining batter.

Bake

Bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is still soft.

Cool and Serve

Let the cakes cool for 1 minute, then carefully invert onto plates. Serve immediately with fresh berries, sweet cream, and additional salted caramel sauce.
