Preparation

Prepare Onion Jam

1. Cook the onions

In a skillet, heat olive oil over medium heat. Add sliced onions and cook until softened, about 10 minutes.

2. Add sugar and vinegar

Stir in brown sugar and balsamic vinegar. Cook until the mixture thickens and becomes jam-like, about 15 minutes. Set aside.

Make Black Garlic Aïoli

3. Blend ingredients

In a bowl, combine mayonnaise, black garlic cloves, lemon juice, and salt. Use a fork or blender to mix until smooth. Set aside.

Prepare French Fries

4. Cut and fry potatoes

Cut potatoes into fries. Heat oil in a deep fryer or large pot. Fry the potato strips until golden brown, about 5-7 minutes. Drain on paper towels and season with salt.

Cook the Burgers

5. Form patties

Divide the ground beef into two equal portions and form into patties. Season with salt and pepper.

6. Smash and cook

Heat a skillet over high heat. Place one patty down and smash it with a spatula. Cook for about 3 minutes until a crust forms. Flip and cook for another 2 minutes. Repeat with the second patty.

7. Add cheese

During the last minute of cooking, place a slice of Tartufo Pecorino cheese on each patty to melt.

Assemble the Burger

8. Toast muffins

Split the English muffins and toast them until golden.

9. Layer the burger

Spread black garlic aïoli on the bottom muffin, add arugula, then top with the cheeseburger patty and onion jam. Cap with the other half of the muffin.
