Waffles

Make waffle batter

Preheat waffle iron. In a medium bowl whisk together 1 cup all-purpose flour, 2 tablespoons granulated sugar, 1 teaspoon baking powder and a pinch of salt until combined.

In a separate small bowl whisk 3 tablespoons milk, 1 whole egg, 2 tablespoons melted unsalted butter and 1 teaspoon vanilla extract until smooth. Pour wet ingredients into dry and stir lightly until just combined; batter should be slightly lumpy but evenly moistened. If too thick, add 1 tablespoon more milk.

Brush or spray waffle iron with a little oil. Spoon batter (amount per your iron size) onto preheated waffle iron and cook until golden and crisp, about 3–5 minutes depending on your appliance. Transfer waffles to a wire rack to keep crisp while assembling sundaes.

Brownie pieces

If using a whole brownie, cut about 3/4 cup worth into bite-size pieces (approximately 1/2-inch cubes). If brownies are cold and firm they are easier to cut. Set aside.

Sundae assembly

Warm the 7 mini marshmallows gently for a toasted effect: place marshmallows on a small sheet of foil and hold under a preheated broiler for 10–20 seconds watching closely until lightly browned; or toast with a culinary torch. Alternatively leave them fresh if you prefer.

Place one fresh waffle or a waffle cut to fit a dessert bowl/plate as the base. Scatter the 3/4 cup brownie pieces over the waffle.

Add 2 scoops of vanilla ice cream on top of the brownies (arrange the scoops so they sit securely on the waffle).

Drizzle 3 tablespoons chocolate sauce over the ice cream and brownies, letting some drip onto the waffle for a sundae look.

Sprinkle 2 tablespoons cookie crumbs evenly over the sundae, concentrating some on top of the ice cream and some around the base.

Scatter the 7 toasted or fresh mini marshmallows over the sundae, tucking a few into the chocolate sauce so they adhere.

Add 1 tablespoon rainbow sprinkles across the top, then pipe or dollop 2 tablespoons whipped cream if using.

Finish with 1 maraschino cherry placed on the whipped cream or on top of the highest scoop. Dust lightly with 1/2 tablespoon powdered sugar if desired.

Serving

Serve immediately while waffle is still slightly warm and marshmallows are toasted. Provide a spoon and fork. If making multiple servings, assemble just before serving to prevent the waffle from becoming soggy.
