Strawberry Boba Pearls
Cook tapioca pearls
Bring 4 cups water to a rolling boil in a medium saucepan. Add 1/2 cup tapioca pearls to the boiling water, stir gently to prevent sticking. Cover and cook according to quick-cook pearl instructions: typically 4–6 minutes, stirring occasionally, until pearls float and become tender with a slightly chewy center.
Rinse and soak
When pearls are cooked, remove from heat and let sit covered for 1 minute. Drain pearls into a fine mesh strainer and immediately rinse under cold running water to stop cooking and remove excess starch.
Sweeten pearls
Dissolve 3 tbsp brown sugar in 2 tbsp hot water to make a simple syrup. Transfer warm drained pearls to a small bowl and toss with the brown sugar syrup so they sit in a light coating of syrup. Let sit at room temperature while you prepare the rest of the drink (they become slightly more tender as they absorb syrup).
Strawberry Puree & Fruit
Make the puree
Combine 1 cup hulled fresh strawberries, 1 tbsp granulated sugar, 1 tsp lemon juice, and 2 tbsp water in a blender or food processor. Blitz until smooth. Taste and adjust sweetness — add a little more sugar or lemon if desired.
Strain (optional)
If you prefer a smoother drink, press the puree through a fine mesh sieve to remove seeds. Otherwise, leave as is for more texture. Reserve 2–3 tbsp of the puree for swirling/garnish.
Lemon-Limeade Base
Combine citrus and sweetener
In a pitcher, combine 1/2 cup fresh lemon juice, 1/4 cup fresh lime juice, 2 cups cold water and 1/2 cup simple syrup. Stir until well mixed. Taste and adjust sweetness or tartness — add more simple syrup for sweeter or more water for milder flavor.
Chill with ice
Add 2 cups ice to the pitcher or directly to serving glasses to chill the lemon-limeade. If you want a fizzy finish, do not add club soda yet.
Assemble and Serve
Portion pearls
Divide the sweetened strawberry boba pearls between 3–4 glasses (about 2–3 tbsp pearls per 12-16 oz serving).
Finish with fizz and ice
If using, top each glass with 2 tbsp club soda or sparkling water for light fizz. Add additional ice to fill the glass if needed.
Garnish and serve
Garnish with 1–2 sliced strawberries and a couple of mint leaves. Serve with a wide boba straw and enjoy immediately so pearls remain chewy.
