Method
Base and mix-ins
Soften and portion ice cream
Remove the vanilla ice cream from the freezer 10–15 minutes before assembly to soften slightly so it’s scoopable but not melted. Keep covered while you prepare other components.
Prepare brownie pieces
If not already cubed, cut brownies into roughly 1-inch cubes. If brownies are very dense, warm in a low oven (250°F / 120°C) for 5 minutes to take the chill off; allow to cool slightly before mixing with ice cream.
Prep pretzels
If using the optional buttered pretzel step: melt 1 tablespoon unsalted butter in a skillet over medium heat, add pretzels and toast for 2–3 minutes until aromatic and slightly darker; cool on a sheet. Otherwise, use pretzels at room temperature. Break larger pretzels into bite-sized pieces if necessary.
Combine ice cream with mix-ins
In a large bowl, fold the slightly softened vanilla ice cream with the brownie cubes and half of the pretzels (reserve the rest for garnish). Work quickly: use a spatula to gently swirl so brownies and pretzels are evenly distributed but the ice cream doesn’t fully melt. Alternatively, layer scoops in a serving bowl or platter with brownie pieces and pretzels between scoops for a composed share dessert.

Warm sauces (optional)
Warm the chocolate and caramel sauces slightly for easier drizzling: microwave each sauce in a microwave-safe bowl for 10–15 seconds and stir (or warm in a small saucepan over low heat until fluid). Do not overheat — sauces should be warm and pourable, not hot.
Reserve some chocolate and caramel for presentation. Drizzle chocolate syrup and caramel over the assembled ice cream and mix-ins just before serving. Add extra drizzles to taste so each share portion has both flavors.
Whipped hot honey
Make whipped hot honey
Chill a mixing bowl and beaters in the freezer for 5 minutes. Pour 1 cup heavy whipping cream into the chilled bowl, add 3 tablespoons hot honey, 1 teaspoon powdered sugar (optional), 1 teaspoon vanilla extract, and 1/4 teaspoon of the sea salt (reserve remaining salt for finishing). Whip on medium-high speed until soft peaks form. Taste and adjust: add more hot honey if you want a stronger spicy-sweet note. Whip only until soft peaks so the topping remains dollop-able.
Assembly & serving
Scoop or spoon the ice cream–brownie–pretzel mixture into a large shallow serving bowl or several individual bowls. Aim for 6 to 8 substantial scoops (serves 6).
Generously drizzle the warm chocolate syrup and caramel sauce over the scoops. Add dollops of the whipped hot honey across the top (about 1–2 tablespoons per serving).
Sprinkle reserved pretzels and optional chopped toasted nuts over the top for crunch. Finish with a light scattering of flaky sea salt (use the remaining 1/4 teaspoon).
