Method
Dough & Base
Preheat and prepare
Place an oven rack in the top third of the oven and preheat to 500°F (260°C) for at least 30 minutes. If using a pizza stone, place it in the oven while preheating. Lightly dust a pizza peel or work surface with the all-purpose flour.
Stretch or roll the pizza dough into a 12–14 inch round, leaving a slightly thicker rim for the crust. Transfer dough to the floured pizza peel or a parchment-lined baking sheet if not using a peel.
Red Sauce
Make quick sauce
In a small bowl combine tomato sauce, tomato paste, minced garlic, dried oregano, dried basil, crushed red pepper flakes, salt, and black pepper. Stir until smooth and evenly seasoned. Taste and adjust salt or herbs as desired.
Spread the sauce evenly over the stretched dough, leaving the oiled crust exposed (about 2–3 tbs of sauce; use more or less to preference).
Cheeses
Evenly sprinkle the shredded mozzarella over the sauced dough, covering the surface but leaving the rim clear. Lightly scatter the grated Parmesan over the mozzarella for added flavor and browning.
Meats
Prepare meats (if not pre-cooked)
If your bacon, sausage, or ground beef are not yet cooked: cook bacon in a skillet until crisp, drain and chop. Remove sausage from casings (if applicable) and cook in a skillet over medium heat until browned, breaking into small crumbles; drain any excess fat. Season ground beef with a pinch of salt and pepper and cook until no longer pink; drain. Let all cooked meats cool slightly before assembling.
Layer the meats over the cheese: distribute pepperoni slices evenly (about 18 slices), sprinkle chopped bacon, then evenly scatter the cooked Italian sausage and seasoned ground beef so every slice will have a mix of meats.
Finishing & Bake
If desired, lightly sprinkle dried Italian seasoning and a pinch of freshly ground black pepper over the top.
Slide the pizza onto the preheated stone or place the baking sheet in the oven. Bake at 500°F (260°C) for 8–12 minutes, watching closely: pizza is done when the crust is golden and blistered in spots and cheese is melted and bubbling.
Remove pizza from the oven and let rest for 2–3 minutes on the peel or sheet. If using, garnish with fresh basil leaves, slice, and serve hot.
