Method

Bacon Jam

Cook the chopped bacon in a medium skillet over medium heat until the fat renders and the bacon is browned but not crispy, about 6–8 minutes. Remove bacon with a slotted spoon and reserve 2 tablespoons of bacon fat in the skillet; drain excess fat.

Add the diced onion to the reserved bacon fat and sauté over medium heat until translucent and beginning to caramelize, about 8–10 minutes.

Add the minced garlic and cook 30–45 seconds, until fragrant.

Stir in brown sugar, maple syrup, apple cider vinegar, balsamic vinegar, Dijon mustard, water, salt, black pepper, and red pepper flakes (if using). Bring to a simmer and cook, stirring occasionally, until thickened and jammy, about 6–8 minutes.

Return the cooked bacon to the pan, stir to combine, and cook 1–2 more minutes to meld flavors. Taste and adjust seasoning. Remove from heat and let cool slightly. The jam can be made ahead and refrigerated up to 5 days; warm before using.

Buns

Preheat a griddle or large heavy skillet to medium-high heat while preparing patties.

Butter the cut sides of the King's Hawaiian rolls evenly with softened butter.

Toast the buttered cut sides on the hot griddle until golden brown, about 1–2 minutes. Remove and keep warm.

Beef Patties (Smash Technique)

Divide the ground beef into two equal portions (about 5 oz each). Lightly shape each into a loose ball without compacting.

Season the exterior of each ball generously with kosher salt and black pepper (the salt will mostly hit the exterior; you can also season the griddle later).

Brush or oil the hot griddle with the neutral oil so it shimmers.

Place the beef balls onto the hot griddle, leaving space between them. Using a sturdy spatula or a heavy-duty flat metal press (or another spatula with a wad of foil on top), press each ball down firmly and quickly to form thin patties roughly 1/4 inch thick. Hold pressure for 10–15 seconds to create good contact and a crispy sear.

Let the patties cook undisturbed until the edges are brown and a generous crust forms on the bottom, about 2–3 minutes.

Flip the patties, immediately place one slice of American cheese per patty, and cook another 30–60 seconds until cheese melts and patties are just cooked through (smash patties cook quickly).

Assembly

Place the toasted bottom bun on a plate.

Set one cheese-topped smash patty on the bun, then immediately place the second patty on top (cheese side up if preferred).

Spoon about 2 tablespoons of warm bacon jam over the top patty (adjust to taste).

Top with a lettuce leaf and a tomato slice.

Place the toasted top bun to finish the sandwich. Press gently, slice in half if desired, and serve immediately.
