Season the toasted bread immediately with about 1 teaspoon sea salt, sprinkling evenly across slices so each bite has flavor.

Prepare tomatoes
Cut the tomatoes in half horizontally. If they are very large, cut into quarters. Grate the tomato flesh over a medium bowl using the large holes of a box grater or finely chop and then press through a sieve to capture juices — you want a pulpy, slightly chunky purée (approximately 1 to 1 1/2 cups). Discard skins.

Peel the garlic cloves. Cut one clove in half lengthwise; reserve the other clove finely minced for the tomato mix.
Optional quick char: If you prefer a smoky note, briefly place halved tomato cut-side down on the hot grill for 30–45 seconds before grating to add light char flavor, then proceed to grate.

Rub with garlic
While the toasted bread is still warm, take a halved raw garlic clove and gently rub the cut side over the surface of each slice — the heat will draw a mild garlic aroma into the bread without making it overpowering.
Assemble: Spoon a generous layer of the grated tomato mixture onto each garlic-rubbed toast, spreading to the edges so each bite has tomato.
Finish: Drizzle about 1 tablespoon extra-virgin olive oil over all toasts (divide evenly). Sprinkle flaky sea salt to taste (about 1/2 teaspoon across all slices) and scatter the fresh basil leaves if using. Add a final grind of black pepper if desired.
Serve immediately while the toast is still slightly warm so the bread retains a slight crisp exterior with juicy tomato topping.
