Thyme-Infused Simple Syrup
Combine and heat
In a small saucepan combine 1 cup water and 1 cup granulated sugar over medium heat.
Stir gently until the sugar is fully dissolved and the liquid just comes to a simmer. Do not boil vigorously.
Add 6 fresh thyme sprigs to the saucepan, reduce heat to low, and let the syrup steep for 10 minutes off the boil. Taste after 10 minutes — it should have a noticeable but balanced thyme aroma.
Remove from heat and allow the thyme to steep for an additional 10 minutes for extra herb flavor if desired (keep covered).
Strain the syrup through a fine mesh sieve into a clean jar or bottle, pressing lightly on the thyme to release trapped liquid. Discard thyme sprigs. Cool to room temperature, then refrigerate. Syrup will keep up to 2 weeks refrigerated.
Cocktail Assembly
Build the drink: fill a cocktail shaker with ice. Add 2 oz Botanist Gin, 0.75 oz fresh lemon juice, and 0.75 oz thyme-infused simple syrup.
Shake vigorously for about 10–12 seconds until well chilled and slightly diluted.
Double-strain the shaken mixture into the prepared glass over fresh ice to remove any small ice shards and herb bits.
Top with a 2 oz splash of soda water. Stir gently once to marry the soda with the cocktail without losing too much effervescence.
Serve immediately.
