Prepare the Steak
Season the flank steak with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the flank steak and cook for about 4-5 minutes on each side, or until cooked to your desired doneness. Remove from heat and let it rest.
Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add chopped onions and green bell peppers. Sauté until they are tender, about 5-7 minutes. Remove from heat.
Shred the Steak
Once the steak has rested, slice it thinly against the grain and then shred it into smaller pieces. Mix the shredded steak with the sautéed onions and green peppers. Add the provolone cheese and mix until well combined.
Assemble the Egg Rolls
Lay an egg roll wrapper on a clean surface, with a corner pointing towards you. Place about 2 tablespoons of the steak and cheese mixture in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the top corner with a bit of water.
Serve
Serve hot with your favorite dipping sauce.
