Prep ingredients

If turkey is cold, warm the sliced roasted turkey in a skillet over medium-low heat for 2–3 minutes with a splash of gravy or water to prevent drying. Warm leftover stuffing briefly in the microwave or in a small skillet until pliable (about 1–2 minutes). Thinly slice sage leaves and set aside. Mix mayonnaise with 1 clove minced garlic and 1 tablespoon chopped parsley to make garlic-herb mayo if not using premade.

Assemble sandwiches

Lay out 4 slices of sourdough. Spread about 1 tablespoon garlic-herb mayo on each slice. On each mayo-coated slice, spread 3/4 tablespoon cranberry sauce (about 3/4 tbs) in a thin layer to avoid making the bread soggy. Divide the warm turkey evenly over the four slices (about 3/4 cup turkey per sandwich bottom). Season turkey lightly with a pinch of kosher salt and about 1/4 teaspoon freshly ground black pepper per sandwich.

Add stuffing and sage

Evenly distribute the warmed stuffing over the turkey (about 1/4 cup per sandwich). Sprinkle sliced sage leaves over the stuffing (about 1–2 leaves per sandwich). This adds aromatic, savory flavor that pairs with the cranberry.

Cheese and top

Top each assembled bottom with 2 slices sharp cheddar and 1 slice fontina or gruyère on two of the sandwiches (use 2 cheddar + 1 fontina on the heartier melts) or adjust cheese layers so each sandwich has about 3 slices total. Place the remaining 4 slices of sourdough on top to form sandwiches. Spread about 1/2 tablespoon softened butter on the outside of each top bread slice (buttered side out). If you prefer a richer crust, butter both outer sides (about 1 tablespoon per sandwich).

Pan-grill the sandwiches

Heat a large skillet or griddle over medium-low to medium heat. Place sandwiches buttered-side down and grill 3–4 minutes until the bread is golden brown and the cheese begins to melt. Carefully flip the sandwiches and grill the other side 3–4 minutes, pressing gently with a spatula or a heavy pan lid to encourage even melting. If cheese is slow to melt, cover the pan with a lid for 1–2 minutes to trap heat and finish melting without burning the bread.

Finish and serve

Transfer sandwiches to a cutting board and let rest 1 minute. Slice each sandwich in half on the diagonal. Warm gravy should be served in a small bowl alongside for dipping; optionally spoon 1–2 tablespoons of warm gravy over the cut sandwiches for extra moistness. Garnish with an extra sage leaf if desired. Serve immediately.

Notes

Adjust cranberry sauce amount to taste — a thin layer prevents sogginess. If you have leftover gravy, spooning a small amount into the sandwich before closing will keep it moist, but be cautious to avoid soggy bread. For a toaster-oven method: assemble and bake at 375°F (190°C) on a baking sheet for 8–10 minutes, flipping halfway, until cheese melts and bread is golden.
