Prepare buttered bread

Soften 2 tablespoons of unsalted butter if not already soft. In a small bowl, stir the softened butter with 1 tablespoon milk (optional) and a pinch of salt until slightly whipped — this makes spreading easier and gives a creamier result. Spread about 1 tablespoon of the butter mixture evenly onto one side of each of the four bread slices. The buttered side will be the exterior of the sandwich.

Assemble sandwiches

Place two bread slices butter-side-down on a clean surface. On each, layer 1.5 oz (about half of the 3 oz) mild cheddar cheese (sliced or shredded). Top the cheddar with half a slice of American cheese on each sandwich to improve melt and texture. If using pepper, sprinkle a pinch lightly over the cheese. Close each sandwich with the remaining bread slices, butter-side-up.

Heat the pan

Heat a nonstick skillet or griddle over medium-low to medium heat. Add cooking spray or 1 tablespoon butter to the pan and let it melt and coat the surface. The pan should be hot enough that a bread edge sizzles gently when placed in the pan but not so hot that it browns immediately.

Grill the sandwiches

Place the assembled sandwiches in the skillet, buttered side down. Cook for about 3 to 4 minutes on the first side, checking after 2–3 minutes to ensure the bread is golden brown and the cheese is beginning to melt. Press gently with a spatula to encourage even contact and melting. Flip the sandwiches and cook the other side for another 2 to 3 minutes until golden brown and the cheese is fully melted. If the bread is browning too quickly before the cheese melts, lower the heat to medium-low and cover the pan loosely with a lid for 1–2 minutes to trap heat and help melting.

Finish and serve

Remove the sandwiches from the skillet and transfer to a cutting board. Let rest for 1 minute (this keeps the cheese from spilling out). Cut each sandwich diagonally into two triangles for easy handling by kids. Serve warm with optional sides like carrot sticks, apple slices, or tomato soup. Store any cooled leftovers wrapped in foil and refrigerate up to 24 hours; reheat gently in a skillet over low heat.
