Method

Sandwich preparation

Assemble butter/mayo spread

In a small bowl, combine the softened unsalted butter, mayonnaise (if using), Dijon mustard, kosher salt, black pepper and garlic powder. Stir until smooth and evenly mixed. This mixture will be spread on the outside of the bread for browning and on the inside if you prefer extra richness.

Prepare bread and cheese

Lay out the 4 bread slices on a work surface. On the non-buttered side of two slices, distribute the cheddar (about 3/4 cup per sandwich) and top with the mozzarella to help with stretch. If using any optional add-ins (tomato slices, bacon, caramelized onions, basil), layer them between the cheeses so moisture is contained and the cheese still melts evenly.

Close and butter

Place the remaining two bread slices on top of the cheese to form two sandwiches. Spread a thin, even layer of the butter/mayo mixture on the outside (top and bottom) of each sandwich. Press gently to compact the sandwich slightly.

Cooking

Heat pan

Place a heavy skillet or cast-iron pan over medium-low to medium heat. Allow it to warm for 2–3 minutes so it provides even heat; you want a gentle, steady heat so the cheese melts before the bread burns.

Grill first side

Place one sandwich in the pan, buttered side down. Cook undisturbed for 3–4 minutes, checking after 2–3 minutes to ensure the bread is turning golden brown but not burning. If the bread is browning too quickly, lower the heat.

Flip and press

Using a spatula, flip the sandwich and immediately press down gently with the spatula or a flat spatula. Cook the second side for another 3–4 minutes until golden brown and the cheese is fully melted. If after 4 minutes the cheese hasn't melted, cover the pan with a lid for 1–2 minutes to trap heat and finish melting.

Repeat with remaining sandwich

Remove the finished sandwich to a cutting board and let rest for 1 minute. Repeat the grilling process with the second sandwich, adjusting heat as needed.

Slice and serve

Slice each sandwich diagonally or in half, serve immediately while hot and melty. Optional: serve with ketchup, tomato soup, or pickles.
