Prepare ciabatta
Slice the ciabatta roll horizontally into two even halves. If the interior is dense, scoop slightly to create a shallow pocket for spreads and toppings.
Toast the cut sides under a broiler or in a skillet over medium heat for 2–3 minutes per side, until the surface is golden and slightly crisp but not rock-hard. Remove and let cool briefly so cream cheese won’t melt completely when applied.

Make lemon pepper cream cheese
In a small bowl, combine 3 tablespoons softened cream cheese with 1 teaspoon fresh lemon juice, 1 teaspoon sea salt, and 1 teaspoon freshly ground black pepper. Mix until smooth and homogenous. Taste and adjust lemon, salt, or pepper to preference.
Spread a generous layer (about half the mixture) of the cream cheese on the bottom half of the toasted ciabatta and the remaining on the top half if desired. The bottom should have enough to anchor the toppings without sliding.

Assemble with lox
Arrange the 3 oz (about 85 g) of thinly sliced cold-smoked salmon evenly over the cream cheese on the bottom half of the ciabatta. Fold or layer slices so they sit neatly and cover the surface.
Scatter 1 tablespoon rinsed capers evenly over the salmon. Rinsing reduces excess brine and salt.
Sprinkle 1 teaspoon chopped fresh dill over the toppings and finish with the optional 1 teaspoon capers and 1/4 teaspoon freshly ground black pepper for garnish.
Optional Fresh & Garnish
If using cucumber or tomato slices, layer 2–3 thin slices on top of the cream cheese under the salmon for extra freshness and crunch. Alternatively add a small handful (about 1/4 cup) of arugula or microgreens for peppery contrast.
Close the sandwich with the top half of the toasted ciabatta, press gently to secure, and slice in half if serving to share. Serve immediately with a lemon wedge to squeeze over the lox if desired.
