Clam Chowder Ingredients

Method

Cooking Instructions

1

Prepare the Clams

Rinse the fresh clams under cold water to remove any sand or debris. In a pot, bring the clam juice to a simmer and add the clams. Cook until the clams open, about 5-7 minutes. Discard any clams that do not open. Remove the clams from the pot and set aside.

2

Cook the Bacon

In a large pot, cook the bacon over medium heat until crispy. Remove the bacon, crumble it, and set aside, leaving the bacon fat in the pot.

3

Sauté Vegetables

In the same pot with bacon fat, add the chopped onion and celery. Sauté until soft, about 5 minutes.

4

Add Potatoes and Seasonings

Dice the potatoes and add them to the pot along with thyme, bay leaf, salt, and pepper. Stir to combine.

5

Thicken the Chowder

Sprinkle flour over the vegetables and stir well to coat. Gradually add the clam juice, stirring constantly until the mixture is smooth. Bring to a simmer.

6

Add Heavy Cream and Clams

Once the potatoes are tender, stir in the heavy cream and the cooked clams. Let simmer for another 5 minutes until heated through. Adjust seasoning to taste.

7

Serve

Serve hot, garnished with crumbled bacon on top.
