Method
Build the Cranberry & Pineapple Hennessy Layer
Prepare glass and ice
Choose a large Collins glass or a double rocks glass. Fill the glass with ice (crushed for a slushier texture or cubed for slower dilution) and set aside.
Combine base ingredients
In a cocktail shaker filled halfway with ice, add 3 oz Hennessy VS, 3 oz cranberry juice, 2 oz pineapple juice, 0.5 oz simple syrup and 0.5 oz fresh lime juice.
Shake
Shake vigorously for 10–12 seconds until chilled and slightly diluted.
Strain into glass
Strain the mixture over the prepared ice in the glass, filling it to about three-quarters full. This is the cranberry-pineapple Hennessy layer.
Add Peach Layer
Float peach schnapps
Carefully pour 1 oz peach schnapps over the back of a spoon held just above the drink surface so the schnapps gently layers on top of the cranberry-pineapple Hennessy. Pour slowly to keep the layers distinct.
Optional slight integration
If you prefer a more integrated drink rather than distinct layers, stir gently once with a long bar spoon about 2–3 turns.
Hurricane Accent & Color
Add orange juice and grenadine
Drizzle 1 oz orange juice into the drink toward the side of the glass so it sinks a little, then add 0.25 oz grenadine down the spoon or directly—grenadine will sink and create a deep red gradient at the bottom.
Float dark rum
Using the back-of-spoon technique again, float 0.5 oz dark rum on top as the Hurricane accent. This will create a darker layer on the surface and add aroma.
Garnish & Serve
Garnish the glass with a pineapple wedge on the rim, a lime wheel on the side, and drop a maraschino cherry into the drink. Serve with a straw and a cocktail pick for the garnish.
Advise the drinker to sip through the layers to experience the cranberry-pineapple Hennessy first, a peachy mid-palate, and the rum-Hurricane finish.
