    Prepare the Ingredients

    Chop the cauliflower, slice the mushrooms, and dice the onion, bell pepper, and celery. Mince the garlic.

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the onion, bell pepper, and celery, and sauté until softened, about 5-7 minutes. Add the garlic and cook for an additional minute.

    Add the Remaining Ingredients

    Stir in the chopped cauliflower, sliced mushrooms, canned diced tomatoes (with juice), vegetable broth, Cajun seasoning, and bay leaf. Bring to a boil.

    Simmer the Gumbo

    Once boiling, reduce the heat to low and let simmer for about 20 minutes, or until the cauliflower is tender.

    Cook the Rice

    While the gumbo is simmering, cook the Carolina gold rice according to package instructions.

    Remove the bay leaf from the gumbo. Season with salt and black pepper to taste. Serve the gumbo over the cooked rice and top with crisped okra.
