Prepare the Ingredients
Slice the tomato and prepare the arugula. Set them aside.

Fry the Eggs
In a skillet, melt 1 tablespoon of butter over medium heat. Crack the eggs into the skillet, season with salt and black pepper, and fry to your desired doneness (sunny-side up or over-easy). Remove and set aside.

Cook the City Ham
In the same skillet, add another tablespoon of butter and lightly fry the city ham slices until warmed through and slightly crispy. Remove and set aside.

Toast the Bread
Toast the semolina bread slices in a toaster or on a skillet until golden brown.

Assemble the Sandwich
Spread 1 tablespoon of spicy mayo on each slice of toasted bread. On the bottom slice, layer the fried eggs, followed by the city ham, gouda cheese, sliced tomato, and a handful of arugula. Top with the second slice of bread.

Cut the sandwich in half and serve immediately while hot.
