Fried Chicken

Method

Preparation

  1. 1

    Marinate the Chicken

In a large bowl, combine chicken pieces and buttermilk. Make sure the chicken is fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.

  2. 2

    Prepare the Coating

In another bowl, mix together the flour, garlic powder, onion powder, paprika, salt, and black pepper.

  3. 3

    Coat the Chicken

Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring an even coating. Shake off any excess flour.

  4. 4

    Heat the Oil

In a large, deep skillet or fryer, heat the cooking oil over medium-high heat until it reaches 350°F (175°C).

  5. 5

    Fry the Chicken

Carefully add the coated chicken pieces to the hot oil. Fry in batches, making sure not to overcrowd the pan. Cook for about 10-15 minutes per side, or until the chicken is golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

  6. 6

    Drain and Serve

Once cooked, remove the chicken from the oil and place on a paper towel-lined plate to drain excess oil. Serve hot with garlic collards, mashed Yukon gold potatoes, and drizzled with honey-thyme jus.
