    Prepare the Brisket

    In a small bowl, mix together smoked paprika, brown sugar, garlic powder, onion powder, black pepper, and salt. Rub the spice mixture all over the beef brisket. Let it marinate in the fridge for at least 4 hours, ideally overnight.

    Smoke the Brisket

    Preheat your smoker to 225°F (107°C). Add wood chips of your choice for smoking. Place the brisket in the smoker and add liquid smoke for extra flavor. Smoke for about 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C).

    Rest the Brisket

    Once cooked, remove the brisket from the smoker and wrap it in foil. Let it rest for at least 30 minutes to allow the juices to redistribute.

    Assemble the Sandwich

    Slice the brisket thinly against the grain. Toast the PDM buns lightly, then layer with sliced brisket, cheddar cheese, horseradish cream, and pickled jalapenos.
