    Prepare the Grits

    In a medium saucepan, bring the chicken broth to a boil. Gradually stir in the marsh hen mill grits and reduce heat to low. Cook, stirring occasionally, until the grits are thick and creamy, about 20-25 minutes. Season with salt and a little black pepper to taste.

    Cook the Tasso Ham

    In a large skillet, heat the olive oil over medium heat. Add the tasso ham and sauté until slightly crispy, about 5-7 minutes. Remove from the pan and set aside.

    Make the Smoked Tomato-Poblano Gravy

    In the same skillet, add chopped onion, garlic, and diced poblano pepper. Sauté until the onion is translucent, around 5 minutes. Then, add the smoked tomatoes and cook for another 5-7 minutes until heated through. Mix in the cooked tasso ham.

    Cook the Shrimp

    Add the shrimp to the skillet with the gravy. Cook until the shrimp are pink and opaque, about 3-4 minutes. Season with salt and pepper to taste.

    Spoon the creamy grits into bowls and top with the shrimp and tasso ham gravy. Garnish with chopped green onions before serving.
