Roasted Heirloom Carrots

Prepare the Carrots
Preheat your oven to 425°F (220°C). Wash the heirloom carrots and trim the tops and tails. If they are large, cut them in half lengthwise.

Season the Carrots
In a large bowl, toss the carrots with olive oil, salt, black pepper, and orange zest until evenly coated.

Roast the Carrots
Spread the carrots in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized, turning them halfway through.

Plate the Dish
Once the carrots are roasted, remove them from the oven. On a serving platter, spread a layer of labneh, top with the roasted carrots, and sprinkle with pickled jalapenos and granola.

Finish with a sprinkle of fresh parsley for garnish before serving.
