Prepare the Onions
In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add the sliced onion, season with salt, and sauté until caramelized (about 15-20 minutes). Stir occasionally to prevent burning.

Cook the Chicken Livers
In a separate pan, heat the remaining olive oil and butter over medium-high heat. Season the chicken livers with salt and black pepper. Add the livers to the pan and cook for about 3-4 minutes on each side, or until browned and cooked through. Add minced garlic in the last minute of cooking.

Prepare the City Ham
While the livers are cooking, chop the city ham into small pieces and add it to the pan with the chicken livers for the last 2 minutes to warm through.

Serve
Plate the caramelized onions on the bottom, top with the chicken liver and ham mixture, and serve with a side of creamed corn. Garnish with fresh parsley.
