    Prepare Quinoa

    Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

    Blanch the Vegetables

    In a pot of boiling salted water, blanch the green beans for about 3-4 minutes until tender-crisp. Remove and immediately transfer to an ice bath. Blanch the english peas for 1-2 minutes, then add to the ice bath as well.

    Make the Herb Vinaigrette

    In a bowl, whisk together olive oil, white vinegar, dill, parsley, minced garlic, honey, salt, and pepper until well combined.

    Grill the Salmon

    Preheat the grill to medium-high heat. Season the salmon fillets with salt and pepper. Place the fillets on the grill, skin-side down, and cook for about 5-6 minutes per side or until the salmon is cooked through and flakes easily with a fork.

    Serve

    On a plate, arrange a serving of quinoa, top with grilled salmon, and add blanched green beans and english peas. Drizzle with creamy herb vinaigrette before serving.
